How to Bloom Coffee Properly (And Why It Matters)
Watch someone brew a pour-over and you'll notice a pause almost right at the start: a small splash of water, a swelling, bubbling bed of grounds, and then a wait of thirty seconds or so before the real pouring begins. That pause is the bloom, and skipping it is one of the quickest ways to get an inconsistent cup out of an otherwise careful brew.
What's actually happening during the bloom
Roasting coffee traps carbon dioxide inside the bean's cell structure — it's a natural byproduct of the roasting process, and freshly roasted beans hold onto a lot of it. When hot water first touches the grounds, that trapped gas starts escaping rapidly, which is what causes the visible bubbling and swelling of the coffee bed. If you pour your full amount of water straight away without waiting, that escaping gas pushes water around unpredictably as it exits, causing some grounds to get flooded with water while others hardly get wet at all. The result is uneven extraction: some particles over-extract, some under-extract, and the flavors don't integrate cleanly.
The bloom solves this by using a small amount of water — enough to saturate the grounds without triggering the main brew — and giving the trapped gas a chance to escape on its own timeline before the bigger pours arrive. By the time you start pouring in earnest, the bed is de-gassed and saturated evenly, so water flows through it far more predictably.
How much water and how long
A common starting point is to use about twice the weight of your coffee dose as bloom water — 40g of water for a 20g dose, for instance — just enough to wet all the grounds without letting any of it drain through the filter yet. Give it somewhere in the neighborhood of 30 to 45 seconds before starting your main pours.
Roast freshness changes that window. Very fresh beans, roasted within the last few days, still hold a lot of CO2 and benefit from a slightly longer bloom, closer to 45 seconds, to let more of that gas escape. Beans that have rested for a week or two have already released much of their CO2 naturally, so a shorter bloom around 30 seconds is usually enough. If you don't know your roast date, 40 seconds is a reasonable default that works acceptably across most bags. How to tell it's working
A good bloom should visibly puff up and bubble, sometimes dramatically with very fresh beans, and settle down as the gas finishes escaping. If your coffee barely rises during the bloom, that's not necessarily a mistake on your part — it usually just means the beans are more rested and have less CO2 left to release, which is completely normal for beans a few weeks past their roast date. It's a diagnostic signal about the beans, not a sign you did the bloom wrong.
Does the bloom count toward your ratio?
Yes. The bloom is the opening stage of the pour, not extra water added on top of your intended total. If you're targeting a 1:16 ratio on a 20g dose (320g total water), the roughly 40g bloom is the first 40g of that 320g, and your remaining pours make up the rest. Does every method need one?
The bloom matters most for pour-over and drip methods, where water passes through the grounds once on its way to your cup and uneven flow has nowhere to correct itself. Full-immersion methods like French press, where the grounds sit in the water the whole time regardless, are more forgiving of skipping a formal bloom step, though a quick stir after adding water accomplishes something similar. Espresso and moka pot, which use pressure rather than gravity, work on different mechanics entirely and don't use a bloom stage in the same sense.
