The Coffee-to-Water Ratio Explained: How to Dial In Every Brew Method
Ask five home baristas what makes their coffee taste the way it does, and at least four of them will eventually land on the same idea: the ratio. Not the bean, not the brand of grinder, not the kettle — the plain arithmetic relationship between how much dry coffee you use and how much water you run it through. Get that number right for your method and almost everything else becomes a smaller adjustment on top of a solid foundation.
What "1:16" actually means
A brew ratio is written 1:R, where the 1 is always the coffee and R is the water, both measured by weight. A 1:16 ratio means 16 grams of water for every 1 gram of dry coffee. If you use a 20g dose, you need 20 × 16 = 320g of water — and since 1 gram of water is essentially 1 millilitre, that’s about 320ml. Weighing both sides on a kitchen scale is far more accurate than eyeballing a scoop and a mug line, because a scale doesn’t care how densely your beans were ground or how full your kettle spout looks.
That last point matters more than it sounds. A "scoop" of coffee is a volume measurement, and volume is a poor stand-in for mass when the thing you're measuring is irregular, aerated grounds. A coarse French-press grind and a fine espresso grind of the exact same bean, at the exact same weight, can occupy noticeably different volumes — more air gets trapped between coarse particles than fine ones. Two "level scoops" from two different grind settings can easily differ by several grams of actual coffee, which is enough to shift a 1:16 ratio to something closer to 1:14 or 1:18 without you changing anything you'd call a variable. A scale sidesteps the whole problem: a gram of coffee is a gram of coffee, however it was ground.
Why the ratio drives strength
Strength, in the everyday sense of "this coffee tastes bold" or "this tastes watery," comes almost entirely from how concentrated the brew is — how much dissolved coffee ends up in a given amount of water. A tighter ratio like 1:12 packs more coffee into the same water and produces a noticeably stronger, heavier cup. A looser ratio like 1:18 stretches the same dose across more water and produces something lighter and more delicate. Neither is "correct" in an absolute sense; they're just different points on the same dial, and personal taste is the real tiebreaker.
It helps to see the arithmetic side by side. Take a fixed 20g dose and run it through three different ratios: at 1:12 you'd use 240g of water, at 1:16 you'd use 320g, and at 1:18 you'd use 360g — the same coffee, spread across a 120g swing in water. None of those three ratios is wrong; they're simply three different drinks made from the same beans, and which one you reach for again is a matter of preference, not correctness.
Starting ratios by method
Different brewing methods have settled on different conventional ranges, mostly because of how much time the water spends in contact with the grounds and how the equipment concentrates or dilutes the result:
- Espresso (about 1:2): A small, forceful shot where the ratio of coffee to the liquid that comes out is tight by design — this is what makes espresso a concentrate rather than a drink meant to be sipped by the mugful.
- Moka pot (about 1:10): Stovetop pressure produces something between drip coffee and espresso in strength, with a ratio to match.
- French press (about 1:15): Full immersion for several minutes extracts efficiently, so a mid-range ratio produces a full-bodied cup without over-extracting.
- Pour-over, V60 or Kalita style (about 1:16): The most common starting point for filter coffee, balancing clarity and body.
- Auto-drip machines (about 1:17): Slightly more water per gram of coffee, which suits the longer, gentler contact time of a drip basket.
- Cold brew concentrate (about 1:8): Steeped for 12–24 hours at room temperature or in the fridge, then diluted with water or milk to taste before drinking.

The two directions of the same arithmetic
Most explanations of brew ratio only walk through one direction: you know your dose, so you solve for water. In practice you'll often want to go the other way. Say you've only got 300g of water left in the kettle and you want to know how much coffee to weigh out for a 1:15 French press — divide instead of multiply: 300 ÷ 15 = 20g of coffee. Or say you accidentally weighed out 24g of coffee and want to know what ratio that gives you against a 300g pour: 300 ÷ 24 = 12.5, a noticeably tighter ratio than the 1:16 you may have been aiming for. That's not a disaster, just information — if 12.5 tastes too strong, you now know exactly what to add: to reach 1:16 at that same 24g dose, you'd need 24 × 16 = 384g of water, an extra 84g on top of what you poured. Ratio is not the same thing as extraction
It's easy to conflate "strong" with "over-extracted" and "weak" with "under-extracted," but they're answering different questions. Ratio asks how concentrated the brew is; extraction asks what percentage of the coffee's soluble material actually dissolved into the water. You can brew a strong cup (tight ratio) that's still under-extracted and sour, or a weak cup (loose ratio) that's still over-extracted and bitter. Here's a concrete way the confusion shows up: someone brews a cup, decides it tastes weak, and tightens the ratio from 1:16 to 1:14 on the next attempt. If the real issue was under-extraction — too coarse a grind, water that wasn't hot enough, too short a brew time — a tighter ratio doesn't fix any of that; it just concentrates the same under-extracted, sour flavor into a smaller amount of water. Why brewers converge on a range instead of one number
Notice that every method above is described as "about" a ratio, with real recipes typically spanning a couple of points in either direction — pour-over commonly runs anywhere from roughly 1:15 to 1:17, for instance. That range exists because ratio interacts with everything else about a brew: a lighter roast, which tends to be denser and resist extraction slightly more, is often brewed a touch tighter than a dark roast of the same bean at the same grind. A brewer who likes a bright, tea-like cup will often sit at the loose end of a method's range; a brewer who wants body and weight will sit at the tight end. None of this means the ranges are arbitrary — they reflect decades of brewers converging on what reliably works for a given method's contact time and filtration — but it does mean the published number for your method is a sensible place to start, not a specification to hit exactly.
A practical way to dial in a new bag of beans
When you get a new bag, start at the conventional ratio for your method, brew a cup, and taste it deliberately — not just "good" or "bad," but sour, balanced, or bitter. If it tastes thin and sour, tighten the ratio slightly (fewer grams of water per gram of coffee) or grind a touch finer. If it tastes muddy or bitter, loosen the ratio or grind slightly coarser. Change one variable at a time; changing the ratio and the grind together makes it impossible to tell which adjustment actually helped.
Keep the adjustments small. Moving a pour-over from 1:16 to 1:15.5 is a real, tastable change; jumping straight to 1:12 in one step usually overshoots so far that you can't tell what you actually learned.
